Things to Prepare Before Baking

If you cook low carb with us here at Yaresa Kitchen, there are at least two things you want to keep on hand:
1. King Arthur Keto Wheat FlourÂ
2. Frozen butter
On to the Biscuits!

Make sure your butter is cold and firm. If you haven't yet, place in the freezer for at least 10 minutes. Preheat oven to 375°F.

In a large bowl, combine all the dry ingredients then use a grater to grate the butter or alternatively chop up into tiny pieces. You want to mix the butter into the dry ingredients until you have a crumbly mixture with butter pieces evenly distributed.Â

Stir in the heavy cream, buttermilk and sour cream, and mix very gently. This flour expecially needs gentle mixing as overworking the dough can create an undesired texture. The dough should be sticky but firm enough to hold and shape without it crumbling apart or being to soft to handle.Â

Transfer the dough to a silicon mat, wax paper, or other non-stick surface. Lubricate this surface and your hands with some oil to make handling the dough easier.Â

Flatten the dough with your hands to about an inch in height then fold this square in half and then in half again to make four layers. Flatten the dough again and repeat the folding one more time. Remember to be gentle and don't knead or work the dough. It should be about 3/4 to an inch thick before cutting out your individual biscuits.

- Use a biscuit cutter to get nice round biscuits. You may have to combine left over pieces to make the final 1-2 biscuits. If it's easier, you can make rectangular biscuits using a sharp edge or knife to cut into 12 pieces.Â

(Optional) Add you tray to the freezer for 5-10 minutes to cool before baking for the best outcome.Â

Bake at 375°F for 15-18 minutes, or until golden brown. For an extra special touch, top with broccoli and cheddar or other topping of your choice. Brush with melted butter before serving.
