Biscuits are back on the menu!

I thought I would have to skip this on a low carb diet but here comes King Arthur to save the day! No wonder this company is called King Arthur. A true knight in shining armor. The absolute star of the show is their King Arthur Keto Wheat Flour (or Keto Wheat Pizza Flour) that makes biscuits that taste and feel like the real thing – no missing out. There is a catch though – these are not gluten free. In fact gluten is one of the major ingredients which makes this a low carb, high protein biscuit.

Just Like the Real Thing

These are crumbly, melt in your mouth and may be even more delicious than a biscuit you would get at a brunch spot. Most importantly there is no insulin spike sugar crash afterwards. Note, this is not a low calorie food, but so light on the carbs that it won’t have you feeling weighed down. You can have these at breakfast and head in to your day. This isn’t just for brunch on a lazy Saturday. This is a ready to go staple in my kitchen. Each week I meal prep these to have a low carb breakfast item or side on hand.

And they pair so well with my lobster mushroom dish (pictured below)!

Things to Prepare Before Baking

If you cook low carb with us here at Yaresa Kitchen, there are at least two things you want to keep on hand:

1. King Arthur Keto Wheat Flour 

2. Frozen butter

On to the Biscuits!

Make sure your butter is cold and firm. If you haven’t yet, place in the freezer for at least 10 minutes. Preheat oven to 375°F.

In a large bowl, combine all the dry ingredients then use a grater to grate the butter or alternatively chop up into tiny pieces. You want to mix the butter into the dry ingredients until  you have a crumbly mixture with butter pieces evenly distributed.

Stir in the heavy cream, buttermilk and sour cream, and mix very gently. This flour expecially needs gentle mixing as overworking the dough can create an undesired texture.  The dough should be sticky but firm enough to hold and shape without it crumbling apart or being to soft to handle.

Transfer the dough to a silicon mat, wax paper, or other non-stick surface. Lubricate this surface and your hands with some oil to make handling the dough easier.

Flatten the dough with your hands to about an inch in height then fold this square in half and then in half again to make four layers.  Flatten the dough again and repeat the folding one more time. Remember to be gentle and don’t knead or work the dough. It should be about 3/4 to an inch thick before cutting out your individual biscuits.

  • Use a biscuit cutter to get nice round biscuits. You may have to combine left over pieces to make the final 1-2 biscuits. If it’s easier, you can make rectangular biscuits using a sharp edge or knife to cut into 12 pieces.

(Optional) Add you tray to the freezer for 5-10 minutes to cool before baking for the best outcome.

Bake at 375°F for 15-18 minutes, or until golden brown. For an extra special touch, top with broccoli and cheddar or other topping of your choice. Brush with melted butter before serving.
